Ingredients
2 bunches asparagus, trimmed
1 bunch spring onions, well washed and trimmed
30g butter
salt and pepper, to taste
50g sliced ham
½ x 275g Giorgio’s Artisan Cheese Mozzarella, thinly sliced
2 tablespoons breadcrumbs
1 tablespoon chopped parsley
Instructions
Step 1
Preheat oven to 200C
Step 2
Trim the spring onions to the same length as the asparagus and arrange vegetables in a large baking dish or oven proof plate. Top with chunks of butter and season with salt and pepper. Bake for 10 minutes until the butter has melted and the vegetables are starting to sizzle.
Step 3
Remove from the oven and top with ham and mozzarella allowing the tops and bottoms of the asparagus to peek out. Mix the breadcrumbs and parsley and sprinkle over the cheese and veg. Return to the oven for a further 10-15 minutes until bubbling and golden.

Notes
- This makes a delicious side dish served with roasted meats.
- Depending on the thickness of your asparagus they made need less time in the oven initially. If they are particularly thin, just leave them in the oven long enough to melt the butter and heat the baking dish
